RECIPE: Vegetable Soup
In the latest instalment of her YoYoga blog series, Barbara Cox shares her recipe for a warming vegetable soup that will nourish your solar plexus chakra.
Colour Yourself Healthy – Solar Plexus Chakra
For the solar plexus chakra, we are thinking about yellow foods. Nourishing foods for the solar plexus are foods like egg yolks, sweetcorn, pineapple, yellow squash, yellow courgettes, yellow beans, yellow peppers, banana, brown rice, oats, millet and amaranth. We also love warming spices for the solar plexus, such as turmeric and ginger. You could also consider adding ample amounts of sunflower seeds and chamomile tea throughout your day too.
Try this wholesome vegetable soup recipe for the solar plexus chakra:
Ingredients
- 2 yellow/white onions – chopped finely
- 2 tsp olive oil
- 2 stalks of celery – chopped finely
- 2 cloves of garlic – crushed
- 2L of vegetable stock (from stock cubes)
- 100g of chickpeas – drained and rinsed
- 50g of sweetcorn
- 1 yellow courgette – diced
- 100g yellow string beans – chopped
- 1tsp turmeric – either fresh or ground
- 1 inch of freshly grated ginger
- Cracked pepper to taste
Method
- Heat the olive oil and fry the onion, celery and garlic
- Add the chickpeas, sweetcorn, courgette and string beans
- Add the stock
- Season with turmeric, ginger and pepper to taste
- Bring to a boil, then simmer for 20 minutes
- Serve hot
